Prepare the Batter
In a large mixing bowl, combine the organic cornmeal, gluten-free flour, baking powder, salt, and sugar. Mix well.

Mix Together
Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.

Fold in Blueberries
Gently fold in the wild blueberries into the batter.

Cook the Corncakes
Preheat a non-stick skillet or griddle over medium heat. Pour 1/2 cup of the batter onto the skillet for each corncake. Cook for about 3-4 minutes on each side, or until golden brown.

Serve warm with real butter on top and maple syrup drizzled over the cakes.
