    Prepare the Ingredients

    Preheat your oven to 350°F (175°C). In a large skillet, cook the bacon over medium heat until crispy. Remove and chop into pieces. Discard excess grease, leaving about 1 tablespoon in the skillet.

    Caramelize the Onion

    In the same skillet with the bacon grease, add the sliced onions and cook over low heat until caramelized, about 15 minutes.

    Cook the Potatoes

    In a separate pot, boil the diced redskin potatoes until fork-tender, about 10 minutes. Drain and set aside.

    Mix the Egg Mixture

    In a large bowl, whisk together the eggs, milk, salt, and black pepper. Stir in the cooked bacon, caramelized onions, cooked potatoes, and shredded asiago cheese. Add fresh herbs and mix well.

    Bake the Frittata

    In the same skillet, heat olive oil over medium heat. Pour in the egg mixture and cook for about 5 minutes until the edges begin to set. Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the frittata is puffed and set in the center.

    Allow the frittata to cool slightly before slicing. Drizzle with herb aioli (optional) and serve warm.
