    Prepare the Ingredients

    Wash the spinach thoroughly and chop it roughly. Slice the scallions thinly. Chop the roasted red peppers into small pieces.

    Sauté the Spinach

    In a large skillet, heat the olive oil over medium heat. Add the chopped spinach and sauté until wilted, about 3-4 minutes. Season with salt and black pepper.

    Combine the Eggs

    In a mixing bowl, whisk together the eggs until well combined. Stir in the sautéed spinach, chopped scallions, diced roasted red peppers, fresh mozzarella, and asiago cheese.

    Cook the Frittata

    Pour the egg mixture back into the skillet over medium-low heat. Cook for about 5-7 minutes until the edges begin to set. You can cover the skillet with a lid to help it cook evenly.

    Finish Cooking

    Once the frittata is mostly set, transfer the skillet to a preheated oven at 375°F (190°C) for about 10-15 minutes, or until the top is firm and golden.

    Remove from the oven, let it cool slightly, then slice and serve warm. Enjoy your Florentine Frittata with a drizzle of extra roasted red pepper coulis if desired.
