    Marinate the Pork

    In a large bowl, combine the pork shoulder with the mojo marinade. Cover and refrigerate for at least 4 hours, preferably overnight.

    Cook the Pork

    Preheat your oven to 300°F (150°C). Remove the pork from the marinade and place it in a roasting pan. Cover tightly with foil. Cook for about 4-5 hours, or until the pork is tender and easily shredded.

    Shred the Pork

    Once cooked, remove the pork from the oven and let it rest for 30 minutes. Shred the pork using two forks and season with salt and pepper to taste.

    Prepare the Bread

    While the pork is resting, cut the telera rolls in half. Heat olive oil in a skillet over medium heat and toast the cut side of the rolls until golden brown.

    Assemble the Sandwich

    On the bottom half of each toasted roll, layer a generous portion of the mojo pulled pork, followed by dressed arugula, house-made pickles, and a drizzle of Carolina BBQ sauce. Top with the other half of the roll.
