Prepare Persimmon Puree

Select and puree

If not already pureed, peel one small-medium ripe Fuyu persimmon and cut into chunks. Place pieces in a small blender or food processor and blitz until smooth (about 20–30 seconds). If texture is very fibrous, press puree through a fine mesh strainer to yield about 2 tablespoons of smooth puree.

Mix Base Ingredients

In a mixing glass or shaker, add 3 tablespoons non-alcoholic botanical gin substitute, 1 tablespoon non-alcoholic bitter amaro substitute, and 1 tablespoon non-alcoholic grapefruit aperitif.

Add the 2 tablespoons persimmon puree, 1 ounce fresh ruby grapefruit juice, and 0.5 ounce fresh lemon juice to the mixing vessel.

Add 0.5 teaspoon simple syrup. If your persimmon is not very sweet or you prefer a sweeter drink, add 0.5 teaspoon honey or agave. These small amounts preserve the bitter-aperitif balance while smoothing astringency from persimmon.

Shake & Chill

Fill the shaker with ice (enough to nearly fill). Shake vigorously for 12–18 seconds until the outside of the shaker is well chilled. This both chills and dilutes to proper balance.

Double-strain the cocktail through a fine-mesh strainer into a rocks glass over one or two large ice cubes to remove persimmon fiber and produce a silky texture.

Finish & Garnish

Express an orange or grapefruit peel over the drink by holding the peel 2–3 inches above the surface and giving it a firm twist to release the oils; run the peel around the glass rim and drop into the drink.

Optional: float a star anise or rested dried persimmon slice on top for aroma and visual interest.

Serve immediately. Sip and, if desired, adjust future batches by ±0.5 teaspoon simple syrup (for sweetness) or ±0.5 tablespoon amaro substitute (for bitterness).
