Prepare the Rice
If not using leftover rice, cook jasmine rice according to package instructions. Once cooked, let it cool and refrigerate for at least 30 minutes to firm up.

Prep Ingredients
Dice the ham and slice the Chinese sausage thinly. Chop the green onions and set aside.

Scramble the Eggs
In a large skillet or wok, heat a bit of oil over medium heat. Crack the eggs into the skillet and scramble until just set. Remove from the skillet and set aside.

Cook the Sausage and Ham
In the same skillet, add the Chinese sausage and diced ham. Cook for about 2-3 minutes until they are slightly caramelized.

Add Vegetables
Add the mixed vegetables to the skillet. Stir-fry for another 2-3 minutes until the vegetables are heated through.

Combine Ingredients
Add the cooled rice to the skillet, breaking up any clumps. Mix well with the sausage, ham, and vegetables.

Season the Rice
Pour the soy sauce and sesame oil over the rice mixture. Season with salt and black pepper to taste. Stir everything together until well combined and heated through.

Finally, add the scrambled eggs and chopped green onions. Mix gently to combine and remove from heat.
