    Prepare the Marinade

    In a large bowl, combine soy sauce, rice vinegar, brown sugar, ketchup, minced garlic, grated ginger, sesame oil, and red pepper flakes. Whisk until the mixture is well combined and the sugar is dissolved.

    Marinate the Ribs

    Place the pork spare ribs in a large resealable plastic bag or a shallow dish. Pour the marinade over the ribs, ensuring they are evenly coated. Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight.

    Preheat the Oven

    Preheat your oven to 160°C (325°F).

    Bake the Ribs

    Remove the ribs from the marinade (reserve the marinade for later) and place them on a baking sheet lined with aluminum foil. Cover the ribs with another piece of foil and bake in the preheated oven for about 2 hours.

    Prepare the Sauce

    In a saucepan, bring the reserved marinade to a boil over medium heat. Reduce the heat and let it simmer for about 10-15 minutes, or until it thickens slightly.

    Glaze the Ribs

    After 2 hours, remove the ribs from the oven. Brush the thickened marinade over the ribs, then increase the oven temperature to 220°C (425°F). Return the ribs to the oven and bake uncovered for an additional 15-20 minutes, basting occasionally with the glaze, until they are caramelized.

    Once the ribs are caramelized, remove them from the oven. Sprinkle with sesame seeds and chopped green onions before serving. Cut into individual portions and enjoy!
