Preparation of Chicken

Marinate the Chicken

In a bowl, combine soy sauce and chicken breasts. Allow to marinate for at least 30 minutes.

Coat the Chicken

After marinating, remove the chicken and coat it with cornstarch evenly.

Sauté the Chicken

In a large skillet, heat vegetable oil over medium-high heat. Add the coated chicken and cook until golden brown on both sides, approximately 5-7 minutes per side.

Making the Sauce

Combine Sauce Ingredients

In a bowl, mix together ketchup, rice vinegar, brown sugar, pineapple juice, soy sauce, minced garlic, and grated ginger until well combined.

Add Sauce to Chicken

Once the chicken is cooked, pour the sweet and sour sauce over the chicken in the skillet. Stir to coat the chicken evenly and simmer for 5 minutes.

Sauté the Vegetables

In another skillet, sauté diced bell pepper, onion, and sliced carrot until they are tender, about 5-6 minutes.

Cook the Rice

In a medium saucepan, bring 2 cups of water to a boil. Add 1 cup of white rice, reduce heat, cover, and let simmer for 18-20 minutes until the rice is cooked and water is absorbed.

Serving

Plate the Dish

Serve the sweet and sour chicken over a bed of rice, topped with sautéed vegetables.
