Pork Preparation

For Cooking

Method

Pork Preparation

  1. 1

    Boil the Pork

In a large pot, combine the pork belly, water, ginger, garlic, and Sichuan peppercorns. Bring to a boil over medium-high heat.

  2. 2

    Simmer

Once boiling, reduce the heat to low and let it simmer for about 30 minutes until the pork is tender.

  3. 3

    Cool and Slice

Remove the pork from the pot and let it cool. Once cool, slice it into thin pieces.

Stir-Fry

  1. 4

    Prepare the Stir-Fry Sauce

In a small bowl, mix together the soy sauce, doubanjiang, Shaoxing wine, and sugar. Set aside.

  2. 5

    Cook the Pork

In a large skillet or wok, heat the oil over medium-high heat. Add the sliced pork and stir-fry for about 3-4 minutes until slightly crispy.

  3. 6

    Add Vegetables

Add the sliced bell pepper and minced garlic to the skillet. Stir-fry for an additional 2-3 minutes until the vegetables are tender.

  4. 7

    Combine with Sauce

Pour the stir-fry sauce over the pork and vegetables. Stir well to coat everything evenly and cook for another 1-2 minutes.

  5. 8

    Finish with Green Onions

Remove from heat and stir in the chopped green onions before serving.
