In a large pot, combine the pork belly, water, ginger, garlic, and Sichuan peppercorns. Bring to a boil over medium-high heat.

Once boiling, reduce the heat to low and let it simmer for about 30 minutes until the pork is tender.

Remove the pork from the pot and let it cool. Once cool, slice it into thin pieces.

In a small bowl, mix together the soy sauce, doubanjiang, Shaoxing wine, and sugar. Set aside.

In a large skillet or wok, heat the oil over medium-high heat. Add the sliced pork and stir-fry for about 3-4 minutes until slightly crispy.
