Preparation

    Prepare the Beef

    Slice the beef sirloin into thin strips and marinate with 2 tablespoons of soy sauce, cornstarch, and a pinch of salt for at least 15 minutes.

    Prepare Aromatics

    Mince the garlic and ginger. Chop the green onions into 1-inch pieces. Cut the bell pepper into thin strips.

    Prepare Spices

    Soak the dried red chilies in warm water for about 10 minutes to soften, then chop them into smaller pieces. Toast the Sichuan peppercorns in a dry pan over medium heat for a minute until fragrant, then crush them slightly.

Cooking

    Heat Oil

    In a large skillet or wok, heat 3 tablespoons of cooking oil over medium-high heat until shimmering.

    Stir-fry Beef

    Add the marinated beef to the skillet in a single layer. Cook for about 2-3 minutes until browned, then stir to cook evenly for another 2 minutes. Remove from the skillet and set aside.

    Cook Aromatics

    In the same skillet, add a little more oil if needed. Add the minced garlic and ginger, and sauté for about 30 seconds until fragrant.

    Add Vegetables and Spices

    Add the bell pepper, green onions, dried red chilies, and crushed Sichuan peppercorns to the skillet. Stir-fry for 2-3 minutes until the vegetables are tender-crisp.

    Return the beef to the skillet. Add the remaining 2 tablespoons of soy sauce, adjust seasoning with salt and black pepper as needed. Stir-fry everything together for another 1-2 minutes.
