Marinate the Lamb
In a large bowl, combine soy sauce, sesame oil, minced garlic, grated ginger, black pepper, and salt. Mix well. Cut the lamb shoulder into large chunks and add to the marinade. Cover and let it marinate in the refrigerator for at least 2 hours, preferably overnight.

While the lamb is marinating, wash the scallions thoroughly. Chop the white and light green parts into fine pieces and set aside. Reserve the dark green tops for garnish.

Reduce the heat to medium-low, cover, and continue cooking the lamb for about 30-40 minutes, or until it reaches your desired doneness. Use a meat thermometer to check the internal temperature (145°F for medium-rare).

Once cooked, remove the lamb from the heat and let it rest for at least 10 minutes. Slice the lamb into thin pieces. Arrange the lamb on a serving platter, sprinkle with chopped scallions, sesame seeds, and fresh cilantro. Serve warm.
