Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic. Cover with a damp cloth and let it rest for 30 minutes.

    In a large bowl, mix together ground pork, chopped shiitake mushrooms, green onions, minced garlic, minced ginger, soy sauce, sesame oil, black pepper, and salt. Mix thoroughly until all ingredients are well combined.

    Assemble the Dumplings

    Divide the rested dough into small pieces (about 1 inch each). Roll each piece into a thin circle (about 3 inches in diameter). Place a spoonful of the filling in the center of each circle. Fold the dough over to shape a half-moon and pinch the edges together to seal tightly. Repeat until all the dough and filling are used.
