Prepare the Tofu
Drain the firm tofu and cut it into 1-inch cubes. Set aside.

Chop Aromatics
Finely chop the garlic and ginger. Slice the green onions, keeping the white parts separate from the green tops.
Cooking

Cook the Ground Beef
In a large skillet or wok, heat a tablespoon of oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spatula, about 5-7 minutes.

Add Aromatics and Sauce
Add the chopped garlic, ginger, and the white parts of the green onions to the skillet with the beef. Stir-fry for about 1-2 minutes until fragrant. Then, add the doubanjiang, soy sauce, chili oil, and Sichuan peppercorns. Mix well and cook for another 2 minutes.

Add Tofu
Gently add the cubed tofu to the skillet. Stir carefully to avoid breaking the tofu. Cook for about 2-3 minutes to heat through.

Thicken the Sauce
In a small bowl, mix the cornstarch with water to create a slurry. Pour this mixture into the skillet and gently stir. Cook for another 2-3 minutes until the sauce thickens.

Remove the skillet from heat and garnish with the green tops of the green onions. Serve hot with rice or noodles.
