For Cooking

Method

Preparation

  1. 1

    Slice the Beef

Thinly slice the beef sirloin against the grain into bite-sized strips.

  2. 2

    Chop the Vegetables

Core and slice the bell peppers and onion into thin strips. Mince the garlic and ginger. Chop the green onions, separating the white parts from the green parts.

Sauce Preparation

  1. 3

    Mix the Sauce

In a bowl, combine the soy sauce, Hunan chili paste, rice vinegar, cornstarch, water, sugar, and sesame oil. Stir until the cornstarch is fully dissolved.

Cooking

  1. 4

    Heat the Oil

In a large wok or skillet, heat the vegetable oil over high heat until shimmering.

  2. 5

    Stir-fry the Beef

Add the sliced beef to the hot oil in the wok. Stir-fry for about 2-3 minutes until the beef is browned and just cooked through. Remove the beef from the wok and set aside.

  3. 6

    Cook the Vegetables

In the same wok, add the white parts of the green onions, garlic, and ginger. Stir-fry for about 30 seconds until fragrant. Then add the bell peppers and onion, and stir-fry for an additional 2-3 minutes until they are tender-crisp.

  4. 7

    Combine Everything

Return the cooked beef to the wok, and pour in the prepared sauce. Stir everything together, ensuring that the beef and vegetables are well coated with the sauce. Cook for another 1-2 minutes until the sauce thickens and everything is heated through.

  5. 8

    Finish and Serve

Remove from heat, sprinkle with the green parts of the chopped green onions, and serve hot over rice or noodles.
