    Toast Cumin Seeds

    In a dry skillet over medium heat, toast the cumin seeds for about 2-3 minutes until fragrant. Remove from heat and set aside.

    Prepare Lamb

    Season the cubed lamb shoulder with salt and black pepper. Set aside.

    Chop Vegetables

    Chop the onion, mince the garlic, and grate the ginger. Set aside.

    Sear Lamb

    In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the seasoned lamb cubes and sear until browned on all sides, about 5-7 minutes. Remove the lamb and set aside.

    Sauté Aromatics

    In the same pot, add the chopped onion, garlic, and grated ginger. Sauté for about 3-4 minutes until the onion is translucent.

    Add Tomato Paste

    Stir in the tomato paste and toasted cumin seeds, cooking for an additional 2 minutes.

    Simmer

    Return the seared lamb to the pot, pour in the broth, and stir to combine. Bring to a simmer, cover, and reduce heat to low. Cook for about 1.5 to 2 hours, stirring occasionally, until the lamb is tender.

    Once the lamb is tender, taste and adjust seasoning if necessary. Serve hot, garnished with chopped fresh cilantro and lemon wedges on the side.
