Rinse the Rice
Rinse 2 cups of jasmine rice under cold water until the water runs clear. This helps remove excess starch.

Soak the Rice
Soak the rinsed rice in water for about 30 minutes, then drain.

Prepare the Satay Sauce
In a bowl, combine 4 tablespoons of peanut butter, 1 cup of coconut milk, 3 tablespoons of soy sauce, 2 tablespoons of brown sugar, 2 tablespoons of lime juice, 3 minced garlic cloves, 1 tablespoon of grated ginger, and 1 tablespoon of chili paste. Mix well until smooth.

Cook the Beef
In a skillet over medium-high heat, add the thinly sliced beef sirloin. Cook for about 3-4 minutes until browned. Remove from heat and set aside.

In the clay pot or rice cooker, layer the soaked and drained rice at the bottom. Then add the cooked beef, sliced bell pepper, julienned carrot, and chopped green onions.

Pour the prepared satay sauce evenly over the beef and vegetables in the pot.

Add 2.5 cups of water to the clay pot. Stir gently to combine all ingredients.
