Dumpling Dough Preparation
Making the Dough
In a mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the egg and water. Mix until a dough forms.
Knead the Dough
Transfer the dough onto a floured surface and knead for about 5-7 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.
Filling Preparation
Prepare the Filling
In a bowl, combine the shredded chicken, green onions, soy sauce, ginger, garlic, sesame oil, and pepper. Mix well until all ingredients are evenly combined.
Dumpling Assembly
Roll out the Dough
After resting, roll the dough out on a floured surface until it’s about 1/8 inch thick.
Cut the Dough
Using a round cutter or glass, cut out circles from the dough.
Fill the Dumplings
Place a small spoonful of the filling in the center of each dough circle. Fold the dough over to create a half-moon shape and pinch the edges to seal.
Cooking the Dumplings
Prepare the Broth
In a large pot, heat the vegetable oil over medium heat. Add the chicken broth and bring to a simmer.
Cook the Dumplings
Carefully drop the dumplings into the simmering broth. Cook for about 10-12 minutes, or until the dumplings are cooked through and float to the surface.
Serve
Using a slotted spoon, remove the dumplings from the broth and serve hot.
