Prepare Noodles

Cook the Chow Mein Noodles

Bring a large pot of water to a boil. Add the chow mein noodles and cook according to package instructions until al dente, usually about 3-5 minutes. Drain and set aside.

Prepare Beef

Marinate the Beef

Slice the beef sirloin thinly against the grain. In a bowl, combine the sliced beef with 2 tablespoons of soy sauce, cornstarch, and sesame oil. Mix well and let it marinate for at least 15 minutes.

Prepare Vegetables

Chop the Vegetables

While the beef is marinating, slice the bell pepper and carrot into thin strips. Chop the green onions, separating the white and green parts. Rinse the bean sprouts and set aside.

Prepare Sauce

Make the Sauce

In a small bowl, combine 2 tablespoons of soy sauce, oyster sauce, minced garlic, grated ginger, and sugar. Stir until the sugar dissolves and set aside.

Stir-Fry

Cook the Beef

Heat a large skillet or wok over medium-high heat. Add a tablespoon of oil and cook the marinated beef for about 3-4 minutes until browned. Remove from the pan and set aside.

Stir-Fry Vegetables

In the same pan, add a bit more oil if necessary, and add the white parts of the green onions, bell peppers, and carrots. Stir-fry for about 3 minutes until they start to soften.

Combine Everything

Add the cooked beef back into the pan along with the bean sprouts and the prepared sauce. Toss everything together and stir-fry for an additional 2-3 minutes.

Add Noodles

Finally, add the cooked chow mein noodles to the skillet. Toss everything together until the noodles are heated through and well combined with the beef and vegetables.
