Preparation

  1. 1

    Cook the Bacon

In a large skillet or wok, cook the bacon over medium heat until crispy. Remove the bacon from the skillet, chop into bite-sized pieces, and set aside. Leave the rendered fat in the skillet.

  2. 2

    Scramble the Eggs

In the same skillet with the bacon fat, crack the eggs and scramble them until fully cooked. Remove the eggs from the skillet and set aside with the chopped bacon.

  3. 3

    Prepare the Vegetables

If using fresh mixed vegetables, chop them into small pieces. If using frozen, simply measure out 1 cup.

Cooking

  1. 4

    Stir-Fry the Ingredients

In the same skillet, add the mixed vegetables and cook for 2-3 minutes until heated through. Then, add the preserved vegetables and stir well.

  2. 5

    Combine with Rice and Seasonings

Add the cooked rice to the skillet and mix thoroughly with the vegetables. Pour in the soy sauce, sesame oil, salt, and black pepper. Stir-fry everything together for another 3-5 minutes until heated through.

  3. 6

    Add Bacon and Eggs

Finally, add the chopped bacon and scrambled eggs back into the skillet. Stir everything together until well combined and heated through.

Serving

  1. 7

    Garnish and Serve

Remove from heat and garnish with sliced green onions. Serve hot and enjoy your delicious Bacon Fried Rice with Preserved Vegetables.
