    Prepare the Rice

    If you haven't done so already, cook the jasmine rice according to package instructions. It's best if the rice is made a day in advance and refrigerated, as this helps to firm up the grains.

    Prepare Ingredients

    Dice the ham, slice the Chinese sausage, and chop the green onions. If using frozen mixed vegetables, thaw them beforehand.

Cooking

    Scramble the Eggs

    In a large wok or skillet, heat a bit of oil over medium-high heat. Pour in the beaten eggs and scramble until just set. Transfer the eggs to a plate and set aside.

    Cook the Meats

    In the same wok, add a little more oil if needed, and stir-fry the sliced Chinese sausage and diced ham for about 2-3 minutes until they are lightly browned.

    Add Vegetables

    Add the mixed vegetables to the wok and stir-fry for another 2 minutes until they're heated through.

    Combine with Rice

    Add the cold cooked rice to the mixture in the wok. Break up any clumps and stir-fry everything together for about 3-4 minutes.

    Pour in the soy sauce and sesame oil. Mix well to ensure all the rice is coated. Add salt and pepper to taste.

    Finally, add the scrambled eggs and chopped green onions to the fried rice. Stir everything together for an additional minute to heat through.
