    Clean the spare ribs under cold water and pat them dry with paper towels. Cut them into individual pieces if they are not already cut.

    Make the Marinade

    In a bowl, combine soy sauce, vinegar, sugar, ketchup, minced garlic, and grated ginger. Mix well until the sugar dissolves.

    Place the spare ribs in a large bowl or a resealable plastic bag. Pour the marinade over the ribs, ensuring they are well coated. Seal the bag or cover the bowl and let them marinate in the refrigerator for at least 1 hour, preferably overnight.

    In a large pot, add the marinated ribs along with the marinade and water. Bring the mixture to a boil over high heat, then reduce it to a simmer. Cover and cook for about 40 minutes until the ribs are tender.
