Prepare Dumpling Filling

    Rehydrate Mushrooms

    Soak the dried shiitake mushrooms in warm water for about 30 minutes until softened. Drain and chop finely.

    Prepare Vegetables

    Grate the carrot and chop the sweet bell pepper, garlic sprouts, and green onions into fine pieces.

    Mix Filling

    In a mixing bowl, combine the chopped mushrooms, grated carrot, sweet bell pepper, garlic sprouts, and green onions. Add the eggs, soy sauce, sesame oil, and salt. Mix until well combined.

Make Dumpling Wrappers

    Prepare Dough

    In a large bowl, combine the all-purpose flour and salt. Gradually add water while mixing until a dough forms.

    Knead Dough

    Knead the dough for about 5-10 minutes on a floured surface until smooth and elastic. Cover with a damp cloth and let it rest for 30 minutes.

    Roll Out Wrappers

    Divide the rested dough into small pieces. Roll each piece into a thin circle, about 3 inches in diameter.

Assemble and Steam Dumplings

    Place a small spoonful of the filling in the center of each wrapper. Fold the wrapper in half and pinch the edges to seal, creating a half-moon shape.

    Bring water to a boil in a steamer pot. Line the steamer basket with parchment paper to prevent sticking.
