Pork and Marinade

Method

Pork Preparation

  1. 1

    Prepare the Pork

Cut the pork belly into thick slices (about 1 cm).

  2. 2

    Marinate the Pork

In a bowl, combine the Shaoxing wine, soy sauce, sugar, minced ginger, and minced garlic. Add the pork belly slices and marinate for at least 30 minutes.

Cooking the Pork

  1. 3

    First Cook

In a pot of boiling water, add the marinated pork and cook for 10-15 minutes until just tender. Remove and let cool.

  2. 4

    Slice the Pork

Once cooled, slice the pork belly into thin strips.

Stir-Frying

  1. 5

    Prepare Vegetables

Slice the green and red bell peppers into strips. Chop the scallions into 2-inch pieces.

  2. 6

    Heat the Oil

In a large skillet or wok, heat the vegetable oil over medium-high heat.

  3. 7

    Stir-Fry the Pork

Add the sliced pork to the hot skillet and stir-fry until slightly crispy, about 5-7 minutes.

  4. 8

    Add Vegetables and Seasonings

Add the sliced bell peppers, scallions, Sichuan peppercorns, and Doubanjiang to the skillet. Stir-fry for an additional 3-5 minutes until the vegetables are tender but still crisp.

Serving

  1. 9

    Plate the Dish

Transfer the stir-fried pork and vegetables to a serving platter.

  2. 10

    Garnish and Serve

Garnish with extra scallions if desired and serve hot with steamed rice.
