Prepare the Dumpling Filling

    Rehydrate Mushrooms

    Soak the dried shiitake mushrooms in warm water for about 30 minutes until they are soft. Drain and finely chop.

    Mix the Filling

    In a large bowl, combine the chopped shiitake mushrooms, grated carrots, diced sweet bell pepper, beaten eggs, chopped garlic sprouts, and chopped green onions.

    Season the Filling

    Add soy sauce, sesame oil, salt, and pepper to the vegetable mixture. Mix well until all ingredients are evenly combined.

Make the Dumpling Wrappers

    Make the Dough

    In a mixing bowl, combine the all-purpose flour and salt. Add water gradually and knead until a smooth dough forms. Cover with a damp cloth and let it rest for 30 minutes.

    Roll the Dough

    After resting, divide the dough into small pieces and roll each piece into a thin circle (about 3 inches in diameter).

Assemble and Cook the Dumplings

    Fill the Dumplings

    Place a small spoonful of filling in the center of each wrapper. Fold the wrapper over the filling, pinching the edges to seal tightly.

    Prepare to Fry

    Heat vegetable oil in a large non-stick skillet over medium heat. Place the dumplings in the skillet, making sure they do not touch.

    Fry the Dumplings

    Fry for about 3-4 minutes until the bottoms are golden brown. Carefully add 1 cup of water to the skillet and cover immediately. Allow to steam for about 5-7 minutes or until the water evaporates.

    Once the water has evaporated and the dumplings are cooked through, remove the lid and let them fry for an additional minute. Serve hot with soy sauce or your favorite dipping sauce.
