Prepare the Sauce
In a small bowl, whisk together the soy sauce, rice vinegar, cornstarch, chicken broth, Szechuan peppercorns, and chili paste until smooth. Set aside.

Prepare the Vegetables
Dice the bell pepper and zucchini into small pieces. Slice the green onions and set aside.

Stir-fry the Shrimp
In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Add the shrimp and stir-fry for about 3-4 minutes, or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

Cook the Vegetables
In the same skillet, add the diced bell pepper and zucchini. Stir-fry for about 2-3 minutes until slightly tender but still crisp.

Combine and Finish
Return the cooked shrimp to the skillet with the vegetables. Pour the prepared sauce over the mixture and stir well to combine. Cook for an additional 2-3 minutes until the sauce thickens and coats the shrimp and vegetables.

Add Peanuts and Serve
Stir in the roasted peanuts and sliced green onions. Cook for another minute, then remove from heat. Serve hot over rice or noodles.
