    Prepare the Chicken

    Cut the boneless chicken thighs into bite-sized pieces. Season with salt and black pepper, and set aside.

    Prepare the Vegetables

    Dice the potatoes, slice the bell peppers and onion, and mince the garlic and ginger. Set aside.

    Prepare the Sauce

    In a small bowl, mix together soy sauce, chili paste, oyster sauce, sesame oil, sugar, salt, and black pepper. Stir well and set aside.

    Fry the Chicken

    In a large pan or wok, heat 2 tablespoons of oil over medium-high heat. Add the seasoned chicken and stir-fry until browned and cooked through, about 7-10 minutes. Remove from the pan and set aside.
