    Marinate the Chicken

    In a bowl, combine the soy sauce, Shaoxing wine, oyster sauce, cornstarch, sesame oil, white pepper, and salt. Add the chicken thighs, mix well, and let marinate for at least 30 minutes.

    Prepare the Shiitake Mushrooms

    Soak the shiitake mushrooms in warm water for 20 minutes or until softened. Drain, remove the stems, and slice the caps.

    Rinse the Rice

    Rinse the jasmine rice under cold water until the water runs clear. Drain and set aside.

Cooking

    Cook the Chicken and Mushrooms

    Heat a clay pot over medium heat. Add the marinated chicken and cook for about 5 minutes until browned. Add the sliced shiitake mushrooms and stir-fry for another 2 minutes.

    Add the rinsed jasmine rice to the clay pot, followed by the water. Stir to combine all ingredients.

    Cover the clay pot with a lid and bring to a boil. Once boiling, reduce the heat to low and let it simmer for 20 minutes, or until the rice is fully cooked and has absorbed the water.

    Once cooked, turn off the heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork, then garnish with chopped green onions and coriander leaves before serving.
