Method

Preparing the Beef

    In a bowl, combine the sliced beef with 1 tablespoon of soy sauce and let it marinate for at least 15 minutes.

Making the Satay Sauce

    In a saucepan over medium heat, combine peanut butter, soy sauce, coconut milk, minced garlic, minced ginger, and chili paste. Stir well until smooth and heated through. Set aside.

Cooking the Rice

    Rinse the rice under cold water until the water runs clear. Drain the rice and set aside.

    In a clay pot or a heavy-bottomed pot, heat the vegetable oil over medium heat. Add the drained rice and stir-fry for about 2-3 minutes until slightly toasted.

    Add 1.5 cups of water to the pot, bring to a boil, then reduce the heat to low, cover, and let it simmer for about 15-20 minutes, or until the rice absorbs all the water.

Cooking the Beef and Vegetables

    In a separate pan, heat a little oil over medium-high heat. Add the marinated beef and stir-fry for 3-4 minutes until browned and cooked through. Remove from the pan and set aside.

    In the same pan, add the julienned carrot, sliced bell pepper, and stir-fry for about 2-3 minutes until the vegetables are slightly tender.

Combining Everything

    Once the rice is cooked, add the cooked beef and vegetables on top of the rice in the clay pot.

    Pour the satay sauce over the beef and vegetables, cover the clay pot, and let it simmer on low heat for an additional 5 minutes to allow the flavors to meld.
