Method

Preparation

  1. 1

    Prepare the Shrimp

Rinse the peeled and deveined shrimp under cold water and pat dry with paper towels. Season with salt and black pepper.

  2. 2

    Prepare the Sauce

In a bowl, mix the soy sauce, oyster sauce, sesame oil, cornstarch, and water until smooth. Set aside.

  3. 3

    Chop the Vegetables

Chop the celery into bite-sized pieces, mince the garlic and ginger, and slice the spring onions.

Cooking

  1. 4

    Cook the Cashews

In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium heat. Add the unsalted cashews and stir-fry for about 2-3 minutes until lightly golden. Remove from the skillet and set aside.

  2. 5

    Stir-Fry the Shrimp

In the same skillet, add another tablespoon of oil. Increase the heat to high and add the seasoned shrimp. Stir-fry for about 3-4 minutes until the shrimp turn pink and are cooked through. Remove from the skillet and set aside.

  3. 6

    Cook the Vegetables

In the same skillet, add the garlic, ginger, and chopped celery. Stir-fry for about 2-3 minutes until the celery is tender but still crisp.

  4. 7

    Combine Everything

Return the cooked shrimp and cashews to the skillet. Pour in the prepared sauce and stir well to combine, cooking for an additional 2 minutes until everything is heated through and well coated with the sauce.

  5. 8

    Finish with Spring Onions

Add the sliced spring onions to the skillet and stir-fry for another minute. Remove from heat and serve immediately.
