Cook the Sausage and Bacon
In the same skillet, add the chopped Conecuh sausage and crispy bacon. Cook until the sausage is browned and cooked through, about 5-7 minutes. Remove from heat.

Cook the Omelet
In a clean non-stick skillet, melt the butter over medium heat. Pour in the egg mixture, tilting the pan to ensure even coverage. Cook until the edges begin to set, about 2-3 minutes.

Add Fillings
Once the omelet is partially set, add the cooked sausage, bacon, breakfast potatoes, and shredded cheddar cheese to one half of the omelet.

Fold and Serve
Carefully fold the omelet over the fillings. Cook for an additional 1-2 minutes until the cheese melts. Serve immediately with mixed greens and toast on the side.
