    Prepare the Grits

    In a saucepan, bring 4 cups of water to a boil. Stir in the McEwen & Sons grits and reduce heat to low. Cover and cook for about 20-25 minutes, stirring occasionally until grits are creamy. Add butter, and season with salt and black pepper to taste.

    Cook the Candied Bacon

    In a skillet over medium heat, cook the candied bacon until crispy. Remove from skillet and let it cool on paper towels, then chop into small pieces.

    Sauté the Mushrooms

    In the same skillet, add olive oil and sauté the artisanal mushrooms until they are golden brown, about 5-7 minutes. Add minced garlic and cook for an additional 1-2 minutes.

    Cook the Shrimp

    Add the shrimp to the skillet and cook until they turn pink and opaque, about 3-4 minutes. Season with salt and black pepper.

    Combine and Serve

    To serve, spoon the creamy grits onto plates, top with the sautéed shrimp and mushrooms, sprinkle with candied bacon and sliced scallions.
