    Prepare the Potatoes

    Peel and dice the potatoes into small cubes. Boil them in salted water until tender, about 10-15 minutes. Drain and set aside.

    Cook the Corned Beef

    In a large skillet over medium heat, add the corned beef. Cook until heated through and slightly crispy, about 5-7 minutes. Remove from the skillet and set aside.

    Sauté the Onion

    In the same skillet, add the Vidalia onion and sauté until translucent and caramelized, about 5-7 minutes.

    Combine Ingredients

    Add the cooked potatoes and corned beef back into the skillet with the onions. Stir to combine and heat through for another 3-4 minutes.

    Cook the Eggs

    In a separate pot, bring water to a gentle simmer. Crack the eggs into small bowls and gently slide them into the simmering water. Poach for about 3-4 minutes until the whites are set but the yolks are still runny. Remove and drain on paper towels.

    Toast the Bread

    While the eggs are poaching, toast the bread slices to your preference.

    Assemble the Dish

    Place the corned beef and potato mixture on plates. Top each serving with a poached egg and drizzle with hollandaise sauce. Serve with toasted bread on the side.
