    Prepare the Charred Onion Puree

    Char onions on a grill or under a broiler until well charred. Blend with a bit of olive oil and salt until smooth. Set aside.

    Prepare the Succotash

    In a skillet, heat olive oil over medium heat. Add diced red bell pepper and cook until softened. Then, add heirloom field beans and corn, cooking until heated through. Stir in fresh herbs, and season with salt and black pepper to taste.

    Grill the Salmon

    Preheat the grill to medium-high heat. Season the salmon fillets with olive oil, salt, and black pepper. Grill the salmon for about 4-6 minutes per side, or until cooked to your liking.

    Prepare the French Mustard Emulsion

    In a small bowl, whisk together the French mustard with a bit of water and olive oil until smooth and creamy.

    Assemble the Dish

    On each plate, spread a layer of charred onion puree. Place a portion of succotash on top, followed by the grilled salmon. Add a handful of roquette lettuce, dollop with Alabama blue crab, and drizzle with the mustard emulsion.
