    Prepare the Pasta

    Bring a large pot of salted water to a boil. Add the bucatini and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Cook the Pancetta

    In a large skillet, heat the olive oil over medium heat. Add the diced pancetta and cook until crispy, about 5-7 minutes. Remove from the skillet and set aside, leaving the rendered fat.

    Sauté the Corn

    In the same skillet with pancetta fat, add the summer corn and sauté for about 4-5 minutes until caramelized. Season with salt and black pepper.

    Combine Ingredients

    Add the confit chicken to the skillet with the corn, stirring to combine. Then, add the cooked bucatini and toss everything together, adding reserved pasta water as needed to create a silky sauce.

    Finish and Serve

    Plate the pasta, topped with crispy pancetta, shaved black truffle, and grated cured egg yolk. Garnish with chopped parsley and additional black pepper to taste.
