In a skillet, cook the house sausage and chorizo over medium heat until browned and cooked through. Drain excess fat, leaving about 2 tablespoons in the pan.

Sprinkle the all-purpose flour over the sausage mixture and stir to combine. Gradually add the milk, stirring constantly until the gravy thickens. Season with salt, black pepper, and red pepper flakes to taste.
