Beignet Preparation

    Activate the Yeast

    In a small bowl, dissolve the yeast in warm water and let it sit for about 5 minutes until it becomes foamy.

    Mix Ingredients

    In a large mixing bowl, combine the flour, granulated sugar, and salt. Make a well in the center and add the yeast mixture, whole milk, and eggs. Mix until a sticky dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 5 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

    Shape the Beignets

    Once risen, punch down the dough and roll it out to about 1/2 inch thickness. Cut into squares or rectangles.

    Fry the Beignets

    In a large pot, heat vegetable oil to 350°F (175°C). Fry the beignets in batches until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

    Dust and Serve

    Dust the warm beignets with powdered sugar and serve with honey marmalade on the side.
