In a large mixing bowl, combine the ground chicken and pork fat (or chicken skin). Mix until well incorporated.

Fold in the diced Granny Smith apples into the meat mixture until evenly distributed.

Add salt, black pepper, dried thyme, garlic powder, onion powder, cinnamon, and nutmeg to the meat and apple mixture. Mix well to ensure even seasoning.

Add Vinegar and Maple Syrup

Drizzle the apple cider vinegar and maple syrup over the meat mixture. Mix everything thoroughly until it's well combined.

If you're using natural casings, rinse them well under cold water and soak them in water for about 30 minutes. Rinse again before stuffing.
