Preparation

  1. 1

    Chill glass

Place a tall beer glass (pilsner or weizen style) in the freezer for 5–10 minutes or fill it with ice water while you prepare the other components. This keeps the beer colder longer and preserves carbonation.

  2. 2

    Lightly muddle mint

In a small mixing glass or shaker, add the fresh mint leaves and the simple syrup. Gently muddle 6 mint leaves just enough to release aroma and oils — avoid over-muddling to prevent bitterness.

  3. 3

    Add citrus and bitters

Add the 15 ml fresh lemon juice and 2 dashes of orange bitters to the muddled mint mixture. Give it a gentle stir to combine flavors.

Assembly

  1. 4

    Remove chill

If using ice water to chill the glass, discard the ice water now. If you chilled in the freezer, remove the glass just before pouring.

  2. 5

    Add ice (optional)

If you prefer your Gösser Spezial very cold and slightly diluted, fill the glass about one-third with crushed or cubed ice (approx. 1 cup). Otherwise leave the glass empty for a less-diluted presentation.

  3. 6

    Strain mint mixture

Using a fine strainer, pour the mint–lemon–syrup–bitters mixture over the ice (or into the glass if no ice). This keeps leaf fragments out of the beer.

  4. 7

    Top with beer

Slowly tilt the glass and gently pour 500 ml (0.5 l) of cold Gösser Märzen down the side of the glass to preserve carbonation. Pour slowly to maintain a moderate head (about 1–2 cm).

  5. 8

    Final stir and garnish

Give the drink one very gentle stir (1–2 rotations) to integrate the flavors without flattening the beer. Garnish with a lemon wheel on the rim and a sprig of mint placed into the drink for aroma.

Serving

  1. 9

Serve immediately while cold and carbonated. Provide a straw if ice is used, otherwise let the drink be sipped like a beer. Encourage the drinker to enjoy the mint and citrus aroma before each sip.
