Pineapple-Jalapeño Dipping Sauce

Method

Steak Preparation

  1. 1

    Prepare the Steak

Drizzle the NY Strip steak with olive oil. Season both sides generously with salt, black pepper, and garlic powder.

  2. 2

    Cook the Steak

Heat a grill or skillet over medium-high heat. Cook the steak for about 4-5 minutes on each side or until it reaches the desired doneness (medium-rare is about 130°F). Let it rest for 5 minutes before slicing.

Coconut Shrimp Preparation

  1. 3

    Prepare the Breading Station

Set up three bowls: one with flour, one with a beaten egg, and the last with a mix of coconut flakes, panko breadcrumbs, and salt.

  2. 4

    Bread the Shrimp

Dredge each shrimp in flour, dip in the egg, and then coat with the coconut-panko mixture. Press the coating onto the shrimp to ensure it sticks well.

  3. 5

    Fry the Shrimp

In a deep skillet or frying pan, heat vegetable oil over medium heat. Once hot, carefully add the breaded shrimp in batches and fry until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

Pineapple-Jalapeño Dipping Sauce Preparation

  1. 6

    Mix the Sauce

In a bowl, combine diced pineapple, finely chopped jalapeño, honey, lime juice, and a pinch of salt. Mix well until all ingredients are combined.

  2. 7

    Chill the Sauce

Refrigerate the dipping sauce for at least 15 minutes to allow the flavors to meld together before serving.
