Pineapple-Jalapeño Dipping Sauce

    Prepare the Steak

    Start by bringing the NY Strip steak to room temperature for about 30 minutes before cooking.

    Season the Steak

    Rub the steak with olive oil, and season generously with salt and black pepper on both sides.

    Cook the Steak

    Heat a skillet over medium-high heat. Once hot, add the steak and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness.

    Rest the Steak

    Remove the steak from the skillet and let it rest for 5 minutes before slicing.

Coconut Shrimp

    Prepare the Breading Station

    Set up a breading station with three bowls: one for flour seasoned with salt, one for the beaten egg mixed with water, and one for coconut flakes.

    Bread the Shrimp

    Dredge each shrimp first in the flour, then dip it in the egg mixture, and finally coat it with coconut flakes, pressing gently to adhere.

    Fry the Shrimp

    Heat vegetable oil in a frying pan over medium-high heat. Once hot, fry the shrimp in batches for about 2-3 minutes on each side until golden brown. Drain on paper towels.

Pineapple-Jalapeño Dipping Sauce

    In a blender, combine fresh pineapple, diced jalapeño, honey, lime juice, and salt. Blend until smooth.

    Transfer the sauce to a small bowl and serve alongside the coconut shrimp.
