Method

Preparation

  1. 1

    Cook the Linguini

Bring a large pot of salted water to a boil. Add the linguini and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the linguini and set aside.

Cooking the Seafood

  1. 2

    Sauté the Seafood

In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the mussels, clams, shrimp, and scallops to the skillet.

  2. 3

    Add Wine and Spices

Pour in the white wine and sprinkle red pepper flakes, salt, and black pepper over the seafood. Cover the skillet and cook for 5-7 minutes, or until the mussels and clams have opened and the shrimp and scallops are cooked through.

Final Assembly

  1. 4

    Combine Seafood with Pasta

Once the seafood is cooked, add the linguini to the skillet. Toss everything together gently, adding reserved pasta water a little at a time to loosen the sauce as needed.

  2. 5

    Finish the Sauce

Stir in the remaining 2 tablespoons of butter and chopped parsley. Taste and adjust seasoning with salt and pepper as needed.

  3. 6

    Serve

Serve the seafood scampi over the linguini immediately, garnishing with additional parsley if desired.
