Rinse the Rice
In a fine mesh strainer, rinse the long-grain rice under cold water until the water runs clear. This step helps to remove excess starch, preventing the rice from becoming gummy.

Toast the Rice
Add the rinsed rice to the saucepan and stir well to coat the rice with the oil and mix with the vegetables. Cook for 2-3 minutes, stirring frequently, until the rice is lightly toasted and fragrant.

Add Broth and Season
Pour in the chicken or vegetable broth, and add salt and black pepper. Stir to combine everything well.

Raise the heat to high and bring the mixture to a boil. Once it reaches a boil, reduce the heat to low, cover the saucepan with a lid, and let it simmer for 15-20 minutes, or until the rice is tender and the liquid has been absorbed.

Once cooked, remove the saucepan from heat. Let it sit covered for an additional 5 minutes. Then, uncover and fluff the rice with a fork. If using, stir in the pine nuts, dried cranberries or raisins, and chopped fresh parsley before serving.
