Juicing the Pineapple
Take a fresh pineapple and cut it into quarters. Remove the core and blend until smooth. Strain the juice through a fine mesh sieve to remove pulp. Measure out 4 oz of fresh pineapple juice.

Preparing the Prickly Pear Syrup
If using store-bought prickly pear syrup, measure out 1 oz. If making your own, blend prickly pears, strain through a fine mesh sieve, and sweeten with sugar to taste to make 1 oz of syrup.
Mixing the Drink

Combine Ingredients
In a cocktail shaker, add 2 oz of Lyre’s Agave Blanco, 4 oz of fresh pineapple juice, and 1 oz of prickly pear syrup.

Shake it Up
Add 1 cup of crushed ice to the shaker. Secure the lid and shake vigorously for about 15-20 seconds until well chilled.
Serving

Strain and Garnish
Strain the mixture into a chilled glass filled with fresh crushed ice. Garnish with a slice of fresh pineapple, prickly pear slices, and mint leaves.
