Pork Osso Bucco

    Sear the Pork Shanks

    In a large Dutch oven, heat the olive oil over medium-high heat. Season the pork shanks with salt and black pepper. Add the shanks to the pot and sear until browned on all sides, about 10 minutes. Remove the shanks from the pot and set aside.

    Sauté the Vegetables

    In the same pot, add the chopped onion, carrot, and celery. Sauté for about 5 minutes until the vegetables are softened. Add the minced garlic and cook for an additional minute until fragrant.

    Add Tomato Paste and Wine

    Stir in the tomato paste and cook for 2 minutes. Pour in the red wine, scraping the bottom of the pot to deglaze. Let it simmer for about 5 minutes until slightly reduced.

    Braise the Pork

    Return the pork shanks to the pot. Add the chicken broth, thyme, and bay leaves. Bring to a boil, then reduce heat to low. Cover and let simmer for 2 to 2.5 hours, until the meat is tender and falling off the bone.

    Adjust Seasoning

    Taste the sauce and adjust seasoning with more salt and black pepper if needed. Remove the bay leaves before serving.

Mashed Potatoes

    Cook the Potatoes

    In a large pot, add the cubed potatoes and cover with cold water. Bring to a boil over high heat. Cook until the potatoes are fork-tender, about 15-20 minutes. Drain and return to the pot.

    Mash the Potatoes

    Add butter, milk, salt, and black pepper to the drained potatoes. Mash with a potato masher or mixer until smooth and creamy. Adjust seasoning to taste.
