Potato Skins

Method

Preparation of Potato Skins

  1. 1

    Bake the Potatoes

Preheat your oven to 400°F (200°C). Wash the russet potatoes thoroughly and dry them. Prick each potato with a fork to allow steam to escape during baking.

  2. 2

    Season the Potatoes

Rub each potato with olive oil and sprinkle salt and black pepper over them, ensuring they are evenly coated.

  3. 3

    Bake the Potatoes

Place the potatoes directly on the oven rack or on a baking sheet. Bake for about 45-60 minutes or until the potatoes are tender when pierced with a fork.

  4. 4

    Cool and Scoop

Once baked, remove the potatoes from the oven and let them cool slightly. Cut each potato in half lengthwise and scoop out some of the flesh, leaving about 1/4 inch of potato on the skin.

Assembling and Baking

  1. 5

    Prepare for Second Bake

Increase the oven temperature to 450°F (230°C). Brush the insides of the potato skins with olive oil and season with salt and pepper.

  2. 6

    Add Toppings

Sprinkle shredded cheddar cheese and crumbled bacon evenly over the potato skins.

  3. 7

    Bake Again

Place the prepared potato skins back in the oven and bake for an additional 10-15 minutes until the cheese is melted and bubbly.

  4. 8

    Garnish and Serve

Remove the potato skins from the oven and top with sour cream, sliced green onions, and jalapeños if desired. Serve warm.
