Halibut Fillet Preparation

Prepare the Coating
In three separate shallow dishes, place the flour, beaten eggs, and breadcrumbs. Season the flour with salt and black pepper.

Bread the Halibut
Dredge each halibut fillet in flour, shaking off any excess. Dip in the beaten eggs, then coat with breadcrumbs, pressing gently to adhere.

Fry the Halibut
In a large skillet, heat the vegetable oil over medium heat. Once hot, add the breaded halibut fillets and cook for 3-4 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Make the Dressing
In a small bowl, whisk together the rice vinegar, olive oil, salt, and black pepper.

Mix the Slaw
Pour the dressing over the vegetable mixture and toss to coat evenly. Set aside to marinate for 10-15 minutes.
Wasabi Tartar Sauce Preparation

Combine Ingredients
In a bowl, mix together the mayonnaise, wasabi paste, lemon juice, dill pickles, salt, and black pepper until well combined.
Sandwich Assembly

Assemble the Sandwich
Spread a generous amount of wasabi tartar sauce on the bottom half of each toasted brioche bun. Place a lettuce leaf, followed by the fried halibut fillet, and top with the cucumber-radish slaw. Cover with the top half of the bun.
