Mix Cheese Filling
In a mixing bowl, combine the ricotta cheese, grated parmesan cheese, shredded mozzarella cheese, salt, black pepper, and chopped fresh basil. Mix until well combined and set aside.
Ravioli Dough Preparation

Make the Dough
In a large mixing bowl, whisk together the gluten-free all-purpose flour and a pinch of salt. Create a well in the center and add the eggs, olive oil, and water. Mix until a dough forms.

Knead the Dough
Transfer the dough to a lightly floured surface and knead for about 5-7 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.
Ravioli Assembly

Roll Out the Dough
After resting, divide the dough into two halves. Roll out one half on a lightly floured surface to about 1/8 inch thickness.

Form the Ravioli
Using a spoon, place small dollops of the cheese filling about 1 inch apart on the rolled dough. Moisten the edges around each filling with water, then fold the dough over to create a pocket. Press firmly to seal.

Cut the Ravioli
Using a knife or a pastry cutter, cut between the filled sections to create individual ravioli. Repeat with the second half of the dough.

Add Tomatoes and Cream
Stir in the crushed tomatoes, heavy cream, salt, black pepper, and dried oregano. Simmer for about 10 minutes until the sauce thickens slightly.
Cooking the Ravioli

Boil the Ravioli
Bring a large pot of salted water to a boil. Carefully add the ravioli and cook for about 4-5 minutes or until they float to the surface.

Combine with Sauce
Using a slotted spoon, transfer the cooked ravioli to the saucepan with the pink sauce. Gently toss to coat the ravioli with the sauce.

Serve the ravioli hot, garnished with additional parmesan cheese and fresh basil, if desired.
