Prepare the Cucumber
Wash the cucumber thoroughly. Slice it into thin rounds, approximately 1/8 inch thick. Set aside a few slices for garnish.

Juice the Lemon
Roll the lemon on a countertop with your palm to release the juices. Cut in half and juice to yield about 1 oz of lemon juice.

Prepare the Mint
Gently wash the mint leaves and pat them dry with a paper towel. Give them a slight bruise by gently pressing with your fingers to release their flavor.
Mixing the Drink

Combine Ingredients
In a cocktail shaker, add the Empress Cucumber Lemon Gin, freshly squeezed lemon juice, cucumber slices (reserve some for garnish), and the bruised mint leaves.

Shake
Fill the shaker with ice and shake well for about 15-20 seconds to chill and mix the ingredients thoroughly.

Strain and Serve
Strain the mixture into a highball glass filled with ice. Top with ginger beer to fill the glass.

Garnish with the reserved cucumber slices and a sprig of fresh mint on top.
