Coconut Shrimp

    Prepare the Shrimp

    In a large bowl, season the shrimp with salt and black pepper. Set aside.

    Set Up Breading Station

    In three separate shallow dishes, place the flour, beaten eggs, and a mixture of shredded coconut and panko breadcrumbs.

    Bread the Shrimp

    Coat each shrimp in flour, then dip in the beaten eggs, and finally coat with the coconut and panko mixture. Ensure each shrimp is evenly coated.

    Heat the Oil

    In a large skillet or deep frying pan, heat the oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Shrimp

    Carefully add the breaded shrimp to the hot oil in batches, frying for about 2-3 minutes on each side or until golden brown. Remove and drain on paper towels.

    In a blender or food processor, combine the diced pineapple, jalapeño, honey, lime juice, and salt.
