Cook the Chicken
In a skillet, heat 1 tablespoon of olive oil over medium heat. Season the chicken breast with salt, pepper, cumin, and garlic powder. Cook the chicken for about 6-8 minutes on each side or until fully cooked. Remove from heat and let it rest for a few minutes before slicing it into thin strips.

Sauté the Vegetables
In the same skillet, add another tablespoon of olive oil. Add the sliced bell pepper and onion. Sauté for about 3-5 minutes until the vegetables are tender and slightly caramelized. Season with a pinch of salt and pepper.

Assemble the Quesadilla
On one half of each tortilla, layer some of the cooked chicken, sautéed bell pepper, onion, and a generous amount of shredded cheese. Fold the tortilla over to cover the filling.

Cook the Quesadilla
In a clean skillet over medium heat, place the folded quesadilla. Cook for about 3-4 minutes on each side until the tortilla is golden brown and the cheese is melted. Repeat with the remaining tortillas.

Cut the quesadillas into wedges and serve warm with a side of apple sauce, fries, broccoli, or side salad, accompanied by a soft drink and a scoop of ice cream.
